Yeah... just something I have always done... I needed a little more sugar in my rub I think to get a darker bark... temps seemed to hold all night...

I also like to score it like that as those little fat squares are just freakin awesome..... I will say, maybe I had a little too much wine last night as I was a little to heavy with the knife....

man, it is good to wake up to done que....

was a little unhappy with the spares I got yesterday... they sure had a lot of junk under them.... meaning all those extra pieces.... usually have some... but I thought that was a little more than normal....
