I had some cornbread mix in the pantry. It was a lazy Sunday afternoon. I had the game on, tunes going, SJ smoking.........just had to try em. Kids went nuts for em!:thumb:

I was too lazy to dig out the CI pan from the trailer....so, just used the lid from my DO.

Reminds me of when I was small and we had the corncakes from the skillet!!! They were great! Looks delicious!
 
That looks magnificent! I will be making that dish for sure! I think I will be trying to use it as the bread for my juicy lucy tribute to Posey's thread.

Man there are some great recipes here tonight!
 
They look great! Did you cut the handle off of a cast-iron pan? I have a cast-iron pan that looks like that love the idea.

Pretty awesome idea isn't it. I get so many tips and tricks from this place it is insane!
 
Thanks for posting that! I was wanting to make those after Boshizzle's post and proceeded to plum forget. I've been making bacon (also inspired by Boshizzle), so maybe I'll have next week's batch of bacon with some corncakes! :thumb:

Ooops I over-looked that in the post. Yes this place does have some excellent ideas.
 
look great bob! I made some the other morning using buttermilk and I put blueberries in them. good stuff.
 
Awesome corn bread! I'll take some with butter and a glass of milk, please. :becky: Good idea using the DO lid too.
 
Those look good. Did you just take a box of cornbread mix and add a can of corn? The mix looks runny. I want to try them...any advice?
 
Thanks everyone! I just used some instant cornbread mix. I used two packages and just doubled the recipe, but for some reason it did come out a bit runny. However, for making cakes it worked out just fine. I drained the corn and added it to the mix. Next time, I'll leave the corn out and just make em like regular pancake and put some butter and honey on em. I like the idea of blueberries too. I had also thought about putting some diced jalapeno in em, but didn't get around to it.
These things are just so good. The DO lid is a great tool to have. I've even used it as a pizza stone. It works great.
