Lamb chops
Finally busted out some of the lamb I picked up a few weeks back. went with some chops...seasoned very simply--garlic salt and pepper:
meanwhile, started some potatoes, cooked in some of the fat I rendered from last year's lamb: put the lamb on the OTG over RO lump, and a few grape vines, and some rosemary stems. Went indirect for a bit: Then on to sear: Plated up with the taters, and some brussel sprouts, cooked in a CI skillet in some bacon grease: Cooked just a shade more than I wanted, but really good anyway: Thanks for lookin!

A bloody good job considering those were very fatty chops. You could have had a serious runnaway fire with those, but managed them well when the fire was pretty much outta control.
If you'd been off to the can when that happened, you would be coming back to charcoal chops! Cheers! Bill
