Default Boston Butt

K I injected the pork butt last night left in refridge til this morning. Rubbed down in mustard and loaded it with rub. Been on going on 5 hours right now. Been spraying a little with water and apple juice. Using Hickory today.

I am using Hickory that I cut up that is well seasoned and it is burning hot and long. Butt is close to 8 lbs. so I think it is going to turn out good. I love this pit and the rotessorie gives it a good even cook.

Won't it just fall off the rotisserie somewhere between 195 and 200?
