Default Copper River Salmon...

For those of us up here in the left hand corner of the country the arrival of Copper River Salmon is a celebrated event. We are fortunate this year that they are having a substantial run...thus driving down the prices. I picked up 3 beauties in the 4-5 lb range from Costco yesterday @ 8.99 per lb. That's quite the bargain! I cut 2 up in to 1 inch steaks and filleted the other. They are food-savered and in the freezer except for a couple of steaks for tonights dinner (more on that later) I've even got a few drop offs to smoke on Memorial May (more on that later too...). Here are a couple of pics of the "ultimate" salmon...IMHO...

Yep...we're not picky about bones...and at these prices I try to keep all the meat I can. That's why I steak most of it...but I like a nice fillet from time to time.
