Default New Ole Hickory for Christmas!!!

Picked up a new to me Ole Hickory CTO today... it was used in a small bbq place here in town got it for a GREAT price it has set in storage for about 1.5 years. I scraped out some of the left over gunk and sprayed it down with greased lighting then washed it out and lit a fire in it!







If anyone has any tips for cooking with a CTO let me hear them...

According to the OH website it is just under 20 sq ft and each rack is approx 26 x 26 in. it needed a little tlc and cleaning but it was chugging along nicely earlier. I have to get new gaskets and a comp firebox and I will be good to go.

You can get six full sized butts on each of the four racks...24 butts...approximately 270 six ounce portions.

Cooking butts overnight and chicken & ribs 2-3 times during the day you can easily feed 400 mouths with a CTO.
