Pull the canvas off....PFFFFT! I use my cooker to keep the area around my basement door clear. Works like a charm.

I'm kinda tired of hearing "how Aarron Frankin" does it. There's so many variables in doing brisket that it does not matter how he does it. How he does it won't work for you. Only thing you can do same as him is wrap in butcher paper. After that you're on your own.
