Wow, I never did one of those before but now I think I will. Will you share your recipe? I just made some homemade caraway seed kraut that would work perfectly with that...

Soak Corned beef for 48 hours changing water often.
Rinse and dry meat, rub with butchers grind pepper, garlic, onion, crushed coriander,caraway seed, juniper berry. ( I add a little paprika to)


I start at 275 for 2 hours and go up to 325 till done. A little Oak and cherry gits it done. Smoke till tender and your probe goes in like butter.

To reheat/serve- I place meat covered in a colander over a pot of water until up to temperature.
Slice paper thin and enjoy!
