Default Primo XL next weekend

I have a chance to test drive a Primo XL Ceramic next weekend
Going to cook a couple of times
What would you cook if your goal was to explore this ceramic smoker/grills features?

High heat steaks
Maybe a Brisket
Pizza

Thom, steaks are no-brainers on these guys. They almost cook them better than you can imagine. Pizza? Meh. Also easy. Do the brisket, IMO.

I don't know about the primo but I know the BGE guys say to avoid a really high heat cook the first few times or you'll also cook the gasket. I'd test its low and slow abilities with a butt!

Thom make sure you burp the lid when opening with a fire in there....otherwise you wont need to shave for awhile.....
