I just wanted to take a second and say thanks to everyone who has contributed to the countless UDS threads.

I did my first long smoke last night as a dry run after getting my thermometer situation fixed. I used 16 lit charcoals on top of 16lbs of KBB. Lit at 4:30, up to temp by 5:15. Closed down 2 of 3 vents. Cooked two fatties over a heat disperser that I sat on top of the coals basket.

Made a total of 2 adjustments on the ball valve. Woke up this morning 14 hours later and she was still sitting at 250*. Pretty Farkin Awesome.

That was the test run for the 2 butts I'll be cooking tonight for the competition saturday. I cant thank y'all enough. This dude is EXCITED!
 
I'll second this one, definitely a website full of experiences, both good and bad, that we can learn from. The ever evolving UDS!!!!!
 
I agree. Smoking got so much easier with a UDS than what it was with my old side fire box chargriller.
 
I'm thinking double wall UDS if I do one. Lurkers speak up, experiences with a double wall (drum within a drum) UDS?
 
I don't think a double wall is necessary. I find my UDS to be surprisingly efficient with charcoal.
