Need Help for Food Allergy Fundraiser

We will be participating in food festival in Westchester NY (just north of Manhattan) featuring a non-competition BBQ event. Expected attendance is around 15,000, along with many celebrity chefs doing demos, etc. My group will be the only non-profit, raising money for allergy research and education. I am a skilled home smoker, not part of any competition team. My Backwoods Party and Bradley smokers cannot possibly make enough food to fill the demand. Date is Saturday 9/20, plan on starting the cook friday evening as service starts 11 am. Making pork butts for sliders.
