smokeing wood
As a rule i use hicckory and some frit wood for smokeing.Some one told me that mulberry was a good wood . For everything but beef . What is your opinion on this .

Mulberry is fine, but I use it sparingly since I find the smoke very sweet. It smells a little like cotton candy.

I agree with Ron......
Mix it in small quantities with another dominant wood. Mulberry also burns hotter than other fruit woods. |

I have mulberries growing like weeds on my property, so I usually smoke chicken and pork 50/50 with mulberry and cherry. For me, it is very cheap and I like the flavor. This fall I have to cut two of them down because they are hanging over my power lines, one is dangerously split from last winter's snow. Next year I'll have plenty of large chunks!

I like hams smoked with Mulberry, haven't tried it on other pork though.
And as said use it sparingly.
