BBQ Baked Beans

I've gone back to building from scratch, just because. Below is what I started with last weekend. I'm going to come up with a strictly vegetarian (don't jump me yet, let me splain) base to get the flavor I want. I will then add some type of smoked meat. I promise. The final step will most assuredly be several hours in the smoker, preferably under a butt or some ribs. These aren't bad as is.

1 pound of great northerns sorted washed and in water Saturday @ 2:30 PM

Sunday:
In crock pot with:
5 cups chicken stock
1/2 cup dark brown sugar
1/2 cup molasses
1/2 of a medium onion chopped
1 teaspoon mustard powder
1/2 teaspoon savory


Set on high @ 6:30 AM Sunday
Beans are tender @10:33, turned to low

a little sweet at this point

Remove 1 cup of beans, puree in blender with:
8 oz. tomatoe sauce
1 T chopped garlic
2 T finely chopped japs
1 t salt
1 t black pepper
1 T worsy

add this back in and stir

Very good. Maybe cut back on the sugar,

Peach Baked Beans


8 strips bacon, cut into 1-inch pieces
1 red bell pepper, seeded and chopped
1 large yellow onion, chopped
1 (#10 can, about 6 pounds and 10 ounces) baked beans (recommended: Bush's)
3 cups canned peach pie filling
1/2 cup barbecue sauce
2 tablespoons Jack's Old South BBQ Rub, recipe follows

Preheat the oven to 325 degrees F.
Heat a large skillet over medium heat. Add the bacon and cook, stirring, until somewhat crispy and its fat has rendered. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain, leaving the fat in the skillet.
Add the pepper and onion to the skillet and cook, stirring, until softened, about 6 minutes. Transfer the mixture to a large baking pan.
Add the bacon, beans, pie filling, barbecue sauce, and rub to the pan. Mix to combine and bake, uncovered, until hot and bubbly, about 1 hour.
 
Don't forget Bob's Beans too. They are always a favorite at the bashes. Does anyone have a link for them? Mine is broken.

Rick’s Beans


Ingredients:

2 cans Baked beans
1 can green beans (drained)
1 can yellow Wax beans (drained)
1 can Hormel chili
1 roll Jimmy Dean sausage - hot (browned & drained)
1 can tomato soup
1 can tomato paste
1 cup brown sugar
½ cup barbecue sauce


Brown sausage in advance, drain and crumble up. Drain green & wax beans and chop up fine. Mix all ingredients in a large pan and cook 1 & ½ hours @ 350 degrees. Freezes well.

heres one from scratch with dried beans
BOSTON BAKED BEANS


1 lb dried great northern beans, or navy white beans
4 to 6 slices of bacon
1/2 cup chopped onion
1 clove of minced garlic (or more)
2 cups of Hunt's ketchup
1/2 cup of molasses
1 cup of packed brown sugar
1 tablespoon worcestershire sauce
1 tablespoon of mustard (I like to use Dijon)
1 teaspoon chili powder
2 tablespoons of BBQ rub

Go through beans and soak in a pot of salted water that covers the beans by about 3 inches. Soak over night.

Next day, drain and rinse the beans.

Put them back in the pot and cover with fresh water until the water is about 4 inches above the beans.

Bring the water to a boil and then lower the heat to a simmer and continue to cook for 1 to 1 1/2 hours until the beans are just tender.

Wjile the beans are cooking, mix the ketchup, molasses, brown sugar, worcestershire, mustard, chili powder and rub.

Preheat the oven or smoker to 350*.

Cook the bacon in a skillet until crisp. Remove it, and cook the onion and garlic in the bacon drippings leacving the onion still slightly crunchy.

Once the beans are cooked, set aside 2 cups of the bean water and drain the beans the rest of the way. Pour the beans and bean water into the bowl with the sauce mixture. Add the bacon and onion mixture and combine well.

Put the entire mixture into a 13" x 9" baking dish and cook at 350* for 1 hour or until it's bubbly.

Let it rest for about 10 to 15 minutes and serve.

Applesauce BBQ Beans

1 (15-oz) can White Kidney beans, undrained
1 cup applesauce
1/4 cup barbecue sauce
1/4 cup brown sugar
1/4 cup onions, diced
1 Tbs crumbled bacon
1 Tbs Worcestershire sauce
1 Tbs prepared yellow mustard
1/2 tsp barbecue rub

Mix together in saucepan. Simmer 15-minutes,
stirring occasionally.
