Default Pastrami, on Rye with melted Swiss and Pickle....

Bought a 5 pound corned beef and soaked it in water for 48 hours, changing the water every 12 hours. Rubbed it up with Great Pit Boss rub and wrapped it up tight in wrap and into the frig for 24 hours! Figured we would need some homemade Rye bread to go along, couple of loafs will do. Next onto the smoker for about 4.5 hours, until we reached an internal of 170. Wrapped it up in foil and let it rest for 1 hour and then onto the slicer, as thin as we could get it. The rest is just pure pleasure. This is really good stuff. I think much better than what we get at our deli........Enjoy. Lot's of work but worth every bite!
