Ribs on a UDS ?
I have been loving my UDS I have built with the help of the brethren. I have made ribs several times and the bark on the bottom seems to be a lot better than the top and I have been cooking them bone side down. Has anyone tried meat side down since this is a vertical smoker? Just thinking a may get better bark going this route. thanks

I do ribs in my UDS all the time with pretty good results. I've got 2 racks in mine. I put a rectangular foil pan on the lower one as a diffuser/water pan, & I put the ribs on the top rack. I do the 3-2-1 method at 240. 3-uncovered meat up. 2-foiled meat down. 1(or so)-meat up.

I do mine in the UDS unfoiled. If they need it, I will flip them to prevent any charring and to create an even bark. I've seen some in other threads where they put foil under the rib too.

For even exposure, you can experiment by standing them on a rib rack.
