How much of the lettuce do you trim for a turn in box

I have done a handful of comps and I normally only break the tail end of each individual leaf of where the green leaf meets the core. How many of you guys do this? How many break off more than that?
 
We generally use putting greens (parsley). When the parsley ban was in effect last month, we did our best to simulate parsley rather than laying lettuce flat in the box.

I think that is every bit as good looking as parsley. It's what we use. And I can tell you from a judges perspective that curly leaf is much perfered when picking up a gooey piece of meat. Putting green parsley has to be picked off before sampling, and with already sticky fingers it's a pain.

We did the same with th lettuce when the ban was in effect (our first comp)

Thanks but It wasn't my idea it was Pit Mama's idea. She's the creative one I'm just the... the... yea I don't really know what I am....

Its just the tips and she did something to them before putting them in the box. not sure what but they were farking lovly.
