What, in your opinion, is the difference between a Memphis style sauce and a KC sauce. Is it just the addition of mustard and vinegar in the memphis sauce?

I think the KC sauces have more tomatoes (or tomato products), are sweeter with the brown sugar and molasses. They only get enough vinegar to bring out the flavors.
