Obviously it get's used for the sides so there is always a roll close to the outdoor kitchen. As far as the meat, only for after it is off the smoker for cool downs. Have used it on Ribs before using 3-2-1 but I didn't think they tasted as good as going 4-5 straight up or longer. Poppy like's some bark on the Q....

I answered no because when I foil it never goes back on. I thought the crutch was when you cooked with it on the smoker after it hit the right temp. I just foil and toss in a cooler or an empty - unheated - oven.

I fall squarely in the camp of thought that it is only a tool, and should only be used after you can make good product without it.

What happened with me is, I went to smoking my spares for a straight six hours. I did it for several cooks and had good results. I did a change up and decided to go back to a foil with apple juice and some spices. It had been a long time between crutching and non crutching. The response was overwhelming. The consumers, of my hard work, loved the tenderness and flavor that the apple juice and spice imparted combined with the flavor of the pork. I went 3-2-1 and I'm convinced.

For briskett the crutch is the best way to get the juices and make an au jus. I woudl always use it.

Yes - There are varying degrees and interpretations of foiling. There are those that wrap in foil after cooking (which I do not consider foiling as a cooking method), or foil boat/pan during the cooking process and then there's the method of tightly sealing you food in foil so as to trap the steam and other simmering juices. Which kind are you??? If what your cooking is surrounded by liquid that is simmering/boiling does it make a difference that this is happening in a smoker crock pot or on a stove top, I think not. You can get great ribs/other BBQ meats by foiling, I don't dispute that, and it's a sanctioned acceptable cooking method; but alas, it's the kissing cousin of boiling and as a group, we seem to disdain boiling.

Bill - I think the answer is pretty simple...

The original question was about the merits of using Aluminum Foil for BBQ. Q-Talk, as we all know should be about valid discussion of food,equipment, processes etc.

I just looked at the majority of posts deleted by the other mods and I agree they went well beyond two or three topic posts. While funny and entertaining, they overtook the intent of the original question making it difficult for someone to find value within the thread.

If you want to start a comical thread about foil,Woodpile would be ideal.

Paul Kirk is all about sauces and rubs, I am proud the TX crutch came from TX, it works great, plus speeds up cooking and keeps the meat moist. I wouldn't do it any other way.

Funny thing is the folks on the cookshack forum bash the so-called crutch. They just have a moister enviroment to cook in. If they didn't they would probably be calling it the OK crutch.....
