Concertina wire, while prepping the turn in boxes.
That would keep the moochers at a distance, while im cutting ribs, chicken or brisket for the .........presentation.

Ive got a wireless thermo, its nice but its not necessary. Ive got 2 probes that I feed down the chimney: 1 is to verify the dial thermo on the door, the other goes in the smaller butt. Once the smaller butt strikes its temp, I put the probe in the bigger butt. Once I'm convinced the dial thermo on the door is accurate, I put the probe in the brisket.
I also carry a quick read thermo in my pocket to do a spot check on things like fatties, and to check the butts in different places while the door is open.
