Decided to do a practice cook today for my comp ribs. I wanted to try a couple new things to see what would happen. The taste was just so so, but I thought they looked pretty good.



 
Pullback on the bones are nice. Maybe just a little dark; need that mahogany color. I'd eat them in a flash.:eusa_clap

Ribs have been my toughest meat for comps. I have only been able to get it right a few times. The rest of the time, I fall into the 15-25 range out of 40-50 teams. It seems my color is always a little dark and I have yet to come up with a good flavor profile.
 
I think the color is perfect. I also like the way the pepper and other seasonings are visible on the surface. Provided all your cuts were clean and straight and there wasn't any mishap with the box, I'd give 'em a "9".
 
I have been using The BBQ Rub for my last few rib cooks. Amazing color and just enough heat to go with the sweet.
