What if u cook a chuck roast to 200

I've done a fair number of chuck roasts and steaks and love the flavor.
But usually chewy.

Could one smoke low & slow to 200 and have a tender roast?

Chuck Roast

i have smoked sevral 10 pound chuck roasts as these go on sale where I live all the time. I smoke to a internal temp of 180. Then I place the roast in a aluminum turkey pan with a bottle of beer and 1 cup of water and cover with foil. Bring the temp of your cooker up to 300- 325 if yo can and contine to cook to an internal temp of 210 garaunteed tender!
 
I cook mine low and slow to 200+ internal.
I also wrap it in foil with beef broth after it breaks out of the temperature stall.
Then check it to make sure it pulls apart easily. If not keep cooking.
Sometimes it can go for hours at 200 before it is really tender.
I love me some pulled chuck. :grin:

Pulled beef can be even better than pulled pork, you'll love it!
 
Pulled Chuck with the right seasonings is fantastic.. you won't be dissappointed.

makes a great sandwich just like N8man's pic shows..
 
I like pulled chuck sandwiches so much. The stall can last a while, but, it is nothing shocking to low and slow cooking.
 
Pulled chuck is very good. One thing we use it for is doing a stir fry. We also use shredded smoked chicken, brisket and pulled pork for what it's worth.
