Kinda like deja vu all over again,

Another good reason I use the towel(s) is to help get the brisket or butt back out of the cooler without tipping it around and about, losing those special juices.

I put a layer of towels in the cooler. Then a large foil pan. Put the foiled meat in the foil pan and cover with another towel.

I use newspapers, they get a little damp from the steam. I need to saran wrap.
