Short Ribs in the Frozen Tundra

I love Black Ops. Great bark, excellent savory with a touch of sweet. Pairs really well with the beef. No sauce needed. What's your go to rub?

Too bad brisket doesn't taste like this. At $2.99/lb for prime it's even cheaper than hamburger.

I lightly sprinkle the short ribs with Kosher salt, Granulated garlic, Corse black pepper and spritz with dulited Soy sauce. Sometimes I will coat the ribs with bacon grease before seasoning. That's a trick I learned from "Cowgirl".

I don't regularly save bacon grease, so I use EVOO. Not quite the same.

These turned out great and were the biggest I've ever seen. We figured the largest rib weighed with just over a pound of meat and a 7oz bone. Monsters.
