I have a Chicago paring and boning knife i love. Cheap, don't rust and have lasted for 8 years now with very little maintenance. I use Calphalon chefs knife now, but would love to switch to shun. I agree about staying away from the SS though.

Yep.
I've got Wustoff and Henkels, Ginsu 2000, and Chicago Cutlery too. That little 3" CC paring knife gets used a lot. I've also grown fond of the Santoku style knife lately, but the 10" Dexter Russell is my favorite chef's knife, hands down. I took it to a pro to get sharpened a couple of months ago. It's like a new tool again.

I have a wustof 10" chef knife which is my main multi-tasker, 2 paring knives, 2 cleaver (paring knives and cleavers we're B-day mis-communications with family peeps), and a carving knife. Next on the list is 14" granton blade slicer. Like them divets to reduce friction when cuttin raw, dead animal.

OK.............. I fell into a deal last night. A buddy of mine is a food salesman(wasn't sure if anyone saw my past posts of the deals I get on fresh meat) Any way he is getting me a 10 piece set of Forschner today brand new for his cost $60.00 or $70.00 bucks. he also said if anyone else wanted a set just let me know. Thanks for all of the help and info.

I am going out of town for the weekend( bummer no smoke this weekend) I will get a full list and post pics on Monday. All he could remember was a 10" and 8" chef knives, the paring knife, bone knife a melon baller????? Hone......but it is 10 pcs. with the case.

OK here is the scoop. He told me wrong last night as we were in the garage drinking beer. It is a 12 piece kit..............
