2nd attempt at UDS babybacks tommorrow

Finally going for my second attempt at babybacks on the UDS tomorrow. We're having guests for dinner, so I hope I don't fark it up like the first batch. Here's how I'm planning on approaching them (and please throw in your 2 cents if you think I'm going astray).

-Remove membrane and rub with Yardbird
-UDS at 250* with some hickory
-On for about 3 hours before peeking
-Check for tenderness at 3-hour mark and then every 30 minutes after if needed

Did I miss anything? Should I slather them with mustard before rubbing?
 
I'd recommend spritzing with a little AJ every 30 minutes. At 225, the outside may want to get a little dry and stringy. The AJ will help prevent that. Mustard shouldn't be necessary but it won't hurt.
