LOL...that also but i was going to say spatchcocked chickens on the WSM Mini cooked @ 325-350!

I do them on the drum and the are awesome...i do them on the mini and the are AWESOME x 10!!!
 
Looks great! I had leftover spacthcock chicken for dinner tonight. No sauce needed.

We cook ours at 375 for 2 hours (start cold and slow ramp up while smoke permeates to full temp in 30 minutes). Used Pimento wood again!
 
Pimento wood!:-o Go to Jamaica MON! Good temps to do...my last bird i let it floated at 380-400 for a while.
