The Original Stockyard Cafe used to sell a griddle Fried CFS. They used clarified butter. They’ve moved from the stockyards and I’ve never been to their new location. I used peanut oil

I’m not sure which cut this was. It was tenderized really well by the butcher and as this article states looked as if it had lost a knife fight. Like everything else in our hobby there are several ways to get there, and chicken fried anything is a grand way to arrive. I’ve seen Brisket slices and meatloaf on this forum. This was so tender and void of gristle I’m just guessing but going to say cubed chuck and mechanically tenderized more than one pass.
