Wow. Those are some nice looking chops! :clap: Wait a minute! I took that pic way back in the day before I became a TD moderator and had time to post in Qtalk and compete in TD's. :mmph:

As chosen by Bluesman and dupemaster for their fabulous two-way win-win in the "Where's the Beef?" Throwdown.

CATEGORY DESCRIPTION - READ BEFORE ENTERING

When I was a kid, my Mom used to make a wonderful roast leg of lamb, with delicious gravy from the meat drippings.

Just sayin'. :idea:
 
I have a recipe floating around that I have always wanted to try. I would like to use the drippings, but we'll see how it goes. I do know that this being a first time with this recipe and process will be an adventure as always. Let the fun begin....:biggrin1:
 
I imagine we'll have at least one or two Aussies in on this one, so expect some serious competition in this TD!

Last minute entry.
Like I said, Jed's cooking scared the pants off of me, but I cooked anyway.
Today I cooked Stuffed leg of lamb with a orange gravy.....
The double entry.

First open the leg up with some cuts into the meat.

Lamb, mushrooms, onion, garlic, parsley, spices, oranges and some bread.

Chop everything up, sauté the onions and garlic.

Toss in the mushrooms and cook until the liquid is gone. Add the bread, parsley, spices and orange zest.

Lay it all nice up in the leg.

Roll it tight and tie.
I put some of the trimmed fat across the top so it could render for the gravy and flavor the stuffing.

Like I said, Jed's cooking skills can sometimes scare the pants off of me, so I kept a good eye out for him.

My meat is done and will rest while I make the gravy.

Pour the drippings into a pan, make a rue and add some beef stock and reduce.

So I hope it's ok to enter one thing in two throwdowns.

Here is my official entry for the Ultimate Lamb Cookoff.

This is smoked and braised lamb shanks with root veggies, braised in wine, beef broth and herbs.

It was really good!
