Field Kitchen Question
Hi,
I heard from someone that would know that the DoH requires steel top tables for field kitchens. I was wondering if anyone knew if there was a workaround for that? Maybe utilizing disposable table covers that we discard after each use? Thanks! Eric

Health department rules vary greatly, but I have never heard of that being a requirement.

Eric, my guy over here preferred that, and did not like my 8 ft tables that had a wood surface. Never a problem though...

Most HD's require a sealed "washable surface". Stainless steel is the leading material as it can be washed and won't rust. In a temporary kitchen such as vending, most HD's are fairly lax on this requirement. Wood isn't allowed in most restaurant kitchens but might be allowed in a temporary situation.
