Hey Folks, I'm a newbie to the site, and I really enjoy it. Thanks to all who post answers and pron because it helps a bunch. I have a question about pork. Seems that in competition, shoulders are cooked. Is a shoulder the butt and the picnic arm? I can't find a shoulder anywhere in my town, but I have found both butts and picnics. I've cooked lots of butts, but never the picnic. Do they cook any differently? Thanks in advance for any answers and input.

Welcome Paperboy !!! Head to Cattle Call when you have a moment.

A Whole pork shoulder consists of the butt (top part) and picnic (bottom part). In KCBS, competitions, butts are the primary choice. In others, some require a whole shoulder (both parts) You can cook them the same, picnics have a slightly different texture and taste but are also delicious when cooked properly.

I have tried both and the Shoulder (BUTT) is the one I prefer. Since you have cooked lot's of Butts, try a Picnic and see what you think. Everyone has a preference. That is how we learn! Now get over to Cattle Call and introduce yourself!

I cook all 3 picnic, butt and whole shoulder. Like butt best
