Thanks to all who helped me with the stuffing ideas!

I ended up with a Wildrice, Jasmine rice, w/Shiitake mushroom stuffing.
I got a couple of butts from Costco...you know how it comes as a "glob" of meat... I trimmed it out the best I could...made stuffing, layered, and tied it up. It was a mess after I tied it, but it came out very tender, and was the hit of the Thanksgiving potluck...sorry turkey!:icon_blush::boxing: Cooked at 250* for about 6 hrs, on the 22" WSM with Guava wood...

Stuffing and rolling a pork butt has got to be like herding cats. Nice job. Looks awesome.

really pretty, how did the mushrooms turn out?
seems to me the smoke would bury the flavor.
 
Awesome job tying up that roll brother! Looks like a hit for sure. I'd just want that on my plate with gravy a cold beer and thats about it... well & maybe seconds, but THAT'S about it! :thumb:

Wow, I never would have thought of rolling up a butt, great idea. Looks delicious
 
That looks very good, Roy! How was the meat texture compare to a stuffed pork loin? Butts are definitely cheaper.
