UDS Temp probe location
Was wondering where everyone will put there probe at on the grate. Do you put it in the center? May main concern is if I am doing just 1 piece of meat I want to put the meat in the middle but then my probe is off to the side. Can I clip it to th grate on the Nader side. Will I get false readings with the meat dripping on it? Just curious.

I wouldn't want gunk dripping on the probe. I would have it near the meat, but not too close and keep it clean.

I have a 2" machine screw welded to the bottom of my grate, I clip my probe to it right below the meat. Works perfect. Juices on the probe wire don't matter 1 bit. It's BBQ not a beauty pageant, your gonna get stuff dirty.
