How many people to expect at festivals?
Let's say there is a festival with 45,000 people expected how many should you expect to come to your bbq stand? 5%? 10? Just wanting to make sure I dont have a Line full of people and no bbq to sell them? I would hate to leave that much money on the table!

From the research I've done here, you take the number of expected people, cut that in half, then divide that number by however many vendors there are.
In my opinion, it's much better to sell out of food than go home with excess, so I always err lower in my numbers.

Don't forget to take into account how many people you can serve. I wouldn't plan for 2000 people. You would have serve 4 people every minute for 8 solid hours to serve them all.
