A sharp knife for trimming, box of disposable nitrile gloves, cotton liner to wear under said gloves, temp probe, and wire brush for cleanup.

+ infinity for the Superfast Mk4 Thermapen. It upped my Grilling and Smoking game 100%. Had the original before. Just as good.

my gotta have it, stuck on an island, bare necessities for bbq are:
Thermapen
pig tail food flipper
a decent table
a good chef's knife

this of course does not take into account the "givens" like charcoal, grill, meat

Lighter fluid and Match Light. Just kidding, but I can't believe no one has said that yet.

All my 'must haves' have already been mentioned....
Thermometers one with dual probes for long cooks, and a Quick read one.
Charcoal baskets, Work the same as vortex for a lot cheaper.
