Default Charcoal Chimney Catfish Cookout

I wanted some catfish last night but didn't want to smell up the house so I used a cast iron skillet and my charcoal chimney to cook the catfish.

It worked pretty good as you can see:



It was a great meal.

You can see all the details of how I did this here.

I've used the chimney to grill sausages and hamburgers. It's a great way to grill up small amounts of meat when you don't want to fire up the real grill.

Went back and read the blog version. That is a good idea. Said something about having your chimney elevated, if it was me, I would have just put it on the grate of my grill. My grates are heavy cast iron though, don't know what you are working with.

Also, you were talking about batter and how you like the cornmeal based batters. I like those too, but when I went up to Canada with a bunch of other guys, they used instant potato flakes with seasoning and I thought that was pretty good too.

Man, I really want some catfish now.

I've got cast iron crates on my 22 inch Weber Kettle that would work perfectly. Thanks for the idea.

Nice looking grub. I just spent the afternoon cleaning off the boat and charging the batteries. I'll be in MS next week and plan on some salt water fishing and want the boat to be ready for my return.

Larry have you ever had an issue with leaving your chimney on the concrete? I have heard that it can make the surface chip or pop from the heat. I would think that this might be dangerous. Vince
