The Most Delicious Oxtail Ingredients: Oxtail 1/4 C Stock Salt Pepper 2 TBS Honey 1/4 Chopped Onion 4 Cloves Chopped Garlic Pinch Rosemary Pinch Thyme 1/4 C White Wine 1 Shot Brown Liqure Method: Rub all ingredients (proportions to taste) on the oxtail. Set smoker / grill to 250°F. Cook around 4 ~ 5 hours or until pull apart tender. I ended up wrapping around the 4 hour mark. They were starting to get a little on the dark side. The meat can get very tender, very much like an ultra rich pulled pork with many great levels of flavor.

![]() Been doing oxtail for years on the grill, same with pork hocks too. Tremendous flavor profile. Don't understand why most people wont eat it.

![]() I think it's because most people don't really know what it is, kind of like
sweetbread being the thymus gland in the neck :). The oxtail cut doesn't resemble anything most people grab like a steak or rib or roast or shank. Though, if you line all the oxtail up in a row you can clearly see it is (drum roll) the tail (in most cases from cow not ox as that's a working animal).
