Great Job guys. Everything looks fantastic. Love the idea of using Mexican beach pebbles to keep the napkins from taking wing! The food looked wonderful, and the chefs were looking good

Okay, that sounds reasonable. You are lucky you could take your equipment up early. We are catering a wedding in Carmel Valley in December and they won't let us bring anything in until 2-1/2 hours before the wedding starts. Heck, that doesn't even give us time to light the fires and smoke the tri-tips in a timely manner. We might park at the corrals 1/4 mile away on the ranch to start the smoking process and then slowly drive up to the house later.

I hope you guys don't mind that I ask a lot of questions! ;)
