So I had my maiden voyage smoking a chuckie, came out great! My only issue was my thermometer I was using was not accurate, so when I thought something was wrong, I checked with a probe thermometer and found out it was 120 decrees off! So I took the chuck off, closed the intakes down, let it cool, then added the roast back on when I was at 260. It rolled at 255 the rest of the cook with one valve open.

My UDS without the shelf on it.

This is with the shelf on, which is just 2 brackets behind that act as clips and fit through the metal carrying handle.

Sorry no post smoke pron, was drinking over my neighbors, and everytime I came back to tend to the cook, my phone was being used to play pandora, so I couldn't snap any pics later. Came out great though, and will be doing whole ribeye next!

Nice drum! Let that be a warning to the brethren- always calibrate a new thermo before trusting it. Boiling water (212 F) works well.
