Cherry Chops
Yesterday, I purchased a pork loin from Costco, so that I could slice some boneless chops for my GF's sister and mother visiting. Today, I brined them for two hours in the following:
1/2 gallon of water 1/2 cup of kosher salt 1 cup of white sugar 1/4 cup of SM Cherry Rub I then simmered the brine to get all to meld. I let cool and then placed the chops in the brine for 2 hours in the fridge. I removed them from the brine and let them chill for an hour. After an hour, I sprinkled some cherry rub on the chops liberally. I then went out to the Bubba Keg and got the cooker up to 450* with royal oak lump and two chunks of cherry wood. Here are the results: Burp...they were tasty, I am told
