The mad scientist is back in action. Wings injected with the jerk bbq sauce and seasoned.












and cookin over oak. I'll sauce them a little on the outside when it's closer to being done.

Injecting jerk bbq is certainly a new one for me. Here we go...injected, seasoned with Jerk AP, and brushed with both.

Haven't even tried them yet.

they look beautiful, i bet rubbed with some habanero death dust, then sauced with the jerk would make for a nice complex heat profile. I love my wings like that nice and crisp.

Yea you should! Cooking over a live fire is the sh** , i add splits for a fire sear kiss at the end.
