Default BBQ'd Beef Sammies with my boys...

Prepped the WSM for a session with a 5-6 lb. Chuck Roast. EVOO and Heffer Dust is all I used, hickory and pecan for smoke. This WSM always dials itself in at 240-250 as long as I catch it about 210-220 on the way up. I put it on at 1230 and took it off at 1930. The boys were over for dinner (I get them Tuesday nights) so it was good food and good fun...

Enjoy the pron, and thx for lookin in...

Looks like the boys enjoyed it. With a crew like that bet there weren't many leftovers.

I'm surprised that beef made it to the buns.
