Finally getting around to using some of the rub you sent. Went to the store this morning and picked up a hole chicken and will be cooking at 300 to 325 using Stubbs briquettes and NO smoke. Also gonna have some Savoy cabbage and Mac and cheese for the kids. Will update finished pics as they come.
Got the cabbage going and I usually cook it wrapped in foil and on a grate. Since I don't have a grate in for chicken I had to get creative. Tied up some butcher twine and just hung it from one the bolts that the rack would sit on. Plus it's not right over the fire.
So here's a shot of my first plate. I like a good helping of Franks Red Hot on my cabbage, my favorite parts of the bird. Leg and thigh. Thanks BOB I even put some of the Bob Evens Wildfire sauce on my chicken. Really liked the SAMs rub. Will be doing more chickens like this. Now it's time to kick back in the easy chair and watch NAPCAR.
