Default Sweet-Hot Pork Tenderloin with pr0n...

I love sweet and hot combined, and pork tenderloin is a perfect canvas for sweet and hot.

I started by marinading my pork tenderloin in a mixture of Stubb's Pork Marinade, some cayenne pepper for some extra heat, and a can of pineapple chunks in pineapple juice.







I set up the 18.5-inch OTS with a a chimney or charcoal with a few apple wood chunks.

I forgot to take a picture of the meat on the grill.

While everything else was going on, I had the marinade, with the addition of some fresh local honey, simmering and reducing on the stove to make a thick sauce.



I cooked the tenderloin indirect up to 135 degrees IT, and then did a reverse sear. I let the meat rest, and plated the tenderloin slices on a bed of rice, with sauce on top, and a banana pepper picked from my garden minutes before plating.



It was exactly what I hoped it would be. The balance of heat and sweet was right on. The pineapple chunks soaked up the sauce, and were a perfect compliment for the pork, which was tender and juicy. I am very pleased with how this turned out.
