Poor Man's Burnt Ends w/ Pron

I had read about using chuck to make burnt ends and it got me curious so I decided to give it a whirl this weekend.

Overall they turned out decent, but they are not as good as brisket IMO.

I could have rendered them a bit more I think, but like I said, they were decent and no one complained eating them.

Rubbed down after marinating a day in a beef broth,beer,wosty marinade.

I used the last of my Bovine Bold for the initial rub.

After about 6 or so hours in the smoker and foiled with some broth.

After the initial slice and rub/sauce... I say initial because I needed to give another rub/saucing after they had been in the smoker for an hour and a half.

And finished product … forgive the green stuff above it. Although the asapragi was actually quite good.


Final rub was dinks udder madness and some blues hog championship blend.

Sounds like a very scrumptious meal! I especially like the green stuff! I always like to throw one or two green items in with the meal :thumb:
 
Very nice. I would love a plate of that...green stuff included.

They weren't bad for sure, but I think the texture was the biggest thing that was off from brisket burnt ends.

If you weren't comparing them directly in your mind to brisket burnt-ends they would be great as a standalone item.
 
Yeah, I can definitely see brisket and chuck having different textures. I might give chuck burnt ends a spin soon to try them out.
