Freezing ABT's

Hi,

Has anyone frozen their abt's in advance? I'm going to be making a bunch for WilliePallooza and thought it would be a lot easier to do them a week or so in advance. Would that work?

I'd obviously leave off the bacon until the last minute.

I've frozen cooked ABTs before after vacu-sucking them. They still are pretty darn good - but not quite as good as fresh off of the smoker.
 
Once a jalapeno has been frozen, they turn mushy when defrosting. Some peppers with thicker skins like habaneros, hold up a little better to freezing and defrosting.

I'm just asking...but wouldn't they last a week in the refrigerator with a little plastic wrap?

it doesn't work too well freezing unless they are very crisp or semi ripe to start with. soaking them in sprite or club soda overnight seems to help a bit & it takes some of the heat out.
 
You could make them a few days in advance. Maybe 3-4 and just refrigerate them. That should work fine if it helps.
 
You'll have better luck if you use some dry ice and flash freeze them, then foodsaver.
 
Freezing works fine with baby Poblano's
 
Brrrr Frozen ABT's

We have frozen ABT's ahead of time then smoked them when we needed
them.. Tasted just as good at fresh.. :p
