How many packers can you cook on a UDS for High Heat?

I tried cooking two packers on my UDS.
One on each grate.

I had a hard time keeping the temperature as high as I like.

I think next time I need to use a full basket of coal for the minion.

Anyone else have this issue?

a full basket as compared to what? You should be able to do 2 per grate easily temp wise. Where are you reading your temp?

I want to cook between 325-350.

Reading the temp at the grate level with a brand new probe therm.

if the probe is close to the meat youll get a false reading for a while until the meat starts to warm up.
Did you bring pit to temp before loading?

Drum really needs to be close to temp or she'll fall off and struggle to get back. :thumb:
