Dinner Do-over

That’s some beautiful marbling. What’s the plan?

Plan:
Coat in a mixture of roasted bone marrow and roasted garlic w/ S&P
Sous Vide to 130°
Sear over vortex.
Serve over a board sauce.

Serve with potato roses, Brussels sprouts, roasted mushrooms.
Appetizer - ginger scallops
Dessert - Bread pudding w/ Vanilla Bean Moonshine sauce.

Mint Juleps with lemon basil smash? Uhm.... yeah... Sign me up!

Need some direction / thoughts on those potato roses (I'm sure it's simple.. I'm just not that bright).

Potatoes: slice thin. Lay out in a straight line overlapping by half. Roll up. Add some melted butter and herbs. Bake.

The Silver Oak was thankfully still very good. Very deep flavor and color.
 
And the best part of leftover bread pudding... bread pudding waffles.
