![]() Please accept this as an entry into the Cheese and Bacon Throwdown.
Had some Nice King Island Brie hidden away and thought lets use this. Von and I came up with this after a few drinks. Please enjoy, we sure did. Some of the stars of the show. ![]() ![]() Flattened some thighs out. ![]() Wrapped some Jalopeno with cheese in the Thigh. ![]() ![]() Tightly in cling wrap and in the Fridge for half an hour, hoping it would hold shape. ![]() Then the Bacon and back in clingwrap for another half hour, worked well, no toothpicks needed. ![]() In a tray and in the Acorn, smoking with Plum, using Charcoal and beads. Temp was about 200c for around 20 minutes, the cheese ozzed and created a fantastic sauce. ![]() ![]() ![]() Made a Honey,Soy glaze and dressed the Thighs. Cooked about 10 minutes more. ![]() ![]() Just a touch of sesame seed, lifts the flavour a heap. ![]() ![]() Plated over an Asian Coleslaw. ![]() ![]() Please use the next picture as our polling one and thanks for dropping in. ![]()

![]() Congrats, Titch. You have found a use for Brie rind I can relate to! Usually I find it too bitter for my tastes but I can definitely see that working in this dish.
