Important to remember when you make a curry, plan on eating a bowl when it is ready and making enough for a couple more meals in the next few days.
The reason why is, the curry tastes much better after it has married for a day or 3!
Then you can switch it up!
I added peas and topped with roasted cashews and pickled chilies!
