Default Naked Fattys on the Weber OTS

This should be interesting.....

A couple of naked (well interior anyway) fattys. Doing them on the Weber OTS. I think controlling the heat might be an issue. They have been on for about 45 min now and the ET-732 is showing 239 pit temp with the bottom vent totally closed and top vent full open. Might have to close the top down a little.

Here is my setup....



Lit the KB at the top side of the picture. Vent in the lid is on the bottom side of the picture.



Giving the fattys some Love.





Here they are ready to go..... More pr0n to come with finished product.

Do have to say these turned out spectacular. Was really fun smoking on the Weber OTS. And actually held a steady temp of 230 to 240 once I got it figured out. First one is all gone already. Second one for breakfast tomorrow.

I typically do those with charcoal just on one side of my kettle... Those look good tho.. I can almost smell them from here :)

After seeing how much KB it actually took, I could have easily done that. I don't think I used a quarter of the KB I had in there. Live and learn.

Nice fatties, they turned out great! I've smoked and cooked indirect using both methods, coals on one side and coals on both sides. Both methods work well, but larger cuts of meat seem to cook better when the coals are on both sides since both sides are evenly exposed to radiant heat.
